On more than one occasion during my time with with this diet, I have CRAVED meat. I have the sudden and inevitable occasional urges for a giant, medium steak and my favorite Garlic Parmesan chicken wings from The Dirty Buffalo. Yet, somehow I generally find myself able to resist my former indulgences. That being said, I have found myself trying a variety of meat-like substitutes with my cooking.
I have seen how-to videos and Pinterest pins splattered with these vegan BBQ ribs, and I was excited to give these a try! Following my usual protocol, I found a recipe and added my own flare.
For the original recipe by the amazingly talented Fat Free Vegan Kitchen blogger, click here. In addition to following the recipe and directions as instructed, I also added the following ingredients:
1 tsp. vegan Worcester Sauce (added at the same time as the soy sauce)
1 pinch cayenne pepper
1/4 tsp. chili powder
(Both spices added with the other dry ingredients and spices)
When cooking the jackfruit in the pan, I did add about 2 tbsp. olive oil on medium high heat to the pan, and sautèd the jackfruit for about 10 minutes. This gave the jackfruit more of a charred, grill-like flavor.
In addition, after the regular 30 minutes baking time, I turned the oven to broil and broiled for 20 minutes on each side until BBQ sauce caramelized. This allowed the bbq sauce to really stick to the rib mixture to lock in that yummy bbq flavor.
Nice for a tasty, smoky, bbq dinner!
