Burgers used to be my go-to hangover food. A nice greasy, juicy burger topped with my favorite fixings and paired with some crispy french fries..just the thought of it takes me down mouth-watering memory lane!
This love for burgers has caused experimentation one after another, and various results with trial and error.
I am proud to say that my recipe is now complete, and would be a great help to your post-St. Patty's day menu.
Ingredients| BEST Vegan Black Bean Burgers
3 tbsp. olive oil
1 1/2 cup black beans (soaked overnight in Goya Mojo Marinade or 2-3 tbsp. homemade sofrito)
2 tbsp. minced garlic
1/2 white onion (chopped in small pieces)
1 tbsp. chili powder
1/4 tsp. black pepper
1 tbsp. cumin
1 pinch of cayenne pepper
1 tbsp. smoked paprika
1/2 cup vegan breadcrumbs
1 flax egg or egg replacement (I like Bob's Red Mill's Egg Replacer)
1 tsp. liquid smoke (Mesquite)
1/2 cup chopped fresh cilantro
1 tsp. sea salt
1/2 cup frozen yellow corn
Directions
Preheat oven to 375 degrees.
Place soaked black beans, garlic, onion, spices, bread crumbs, cilantro, liquid smoke, corn, and 1 tbsp. of olive oil in blender.
Pulse a few times, until ingredients are mostly blended. However, don't blend too much! You don't want it to be complete mush.
Remove 1/2 of the mixture from blender and place in medium sized bowl.
Add the egg or egg replacement to the blender with the black bean mixture.
Pulse a few more time until well combined.
Remove remaining mixture from blender and add to bowl with previous black bean mixture.
Use a spatula and mix until well combined. Spray a baking sheet with cooking spray of your choice.
Take 1 medium size handful of the black bean mixture and form into a medium sized patty shape.
Make as many patties as you would like with the mixture. I made 6, 1/4 inch thick slider sized patties.
If you need help with forming a patty, a trick to making the perfect size is to take the lid of a mason jar and form the patty in the lid.
Place patties on baking sheet and bake at 375 degrees F for 15-20 minutes.
Flip the patties and bake for another 15-20 minutes until patties have firmed and remove from oven.
In a skillet, add the remaining 2 tbsp. olive oil on med-high heat.
Place the patties in the hot oil and sear on each side. Serve on bun with any fixings you choose.
