If you have a partner like I do, then you understand in depth, the weekly desire and need for tacos, burritos, and all things Hispanic food related. Honestly, we can't get enough of it here and there are never any objections to adding it our nightly menu.
Now, despite seeing a multitude of recipes, this is my first experience with quinoa. It certainly will not be my last, but I will say I'm not 100% certain this is my favorite. However, it's light and flavorful taste, is a nice addition to meet our cravings. Give it a try and let me know how it turns out for you.

Ingredients:
1 1/2 cup quinoa
1 can black beans (rinsed)
1 can yellow corn (rinsed)
1 can diced tomatoes with chiles
1 small red onion (sliced small)
2 tbsp. minced garlic
1/4 cup diced fresh cilantro
1 fresh lime (squeezed)
2 tbsp. fresh sofrito (Check out the sofrito recipe here!)
1/4 tsp. black smokehouse pepper
1 tsp. coriander
1 tsp. sea salt
1 tbsp. cumin
1 tsp. chili powder
1 tbsp. smoked paprika
Directions:
In a medium sized saucepan, add the quinoa. Be sure to first follow any cleaning instructions on the quinoa, before placing in the saucepan. Add water as instructed on the quinoa bag (about 2 cups of water) to the saucepan, along with the 2 tbsp. of sofrito. Simmer on medium heat until finished cooking. Again, refer to the instructions on the quinoa bag for cook time (about 20 minutes). Set aside when finished.
In a medium sized bowl, add all ingredients and combine until well mixed. Serve warm or chilled. Make a great addition to a taco salad or inside a toasty burrito. Enjoy!
