Harry Potter Inspired Vegan Cinnamon Rolls

I have had three kids and three total adults in my house this weekend. So, it's a good thing I had these monsters prepped before the other monsters arrived. Trying to plan on what to make for my guests this weekend was quite a challenge, especially when you have kids who are extremely picky eaters! So, when I heard that the kids liked cinnamon rolls; I knew exactly what I needed to do. 

I've made these delicious rolls before, and am very thankful for their inspiration from The Unofficial Harry Potter Cookbook by Dinah Bucholz (See Cinnamon Pull Apart Bread on page 114). I veganized these with my own twist and guarantee they will be enjoyed by wizards and muggles alike. Try them out and let me know what you think!

Ingredients

Dough

1 packet instant yeast

1/4 cup warm water 

1/2 cup coconut sugar

2/3 cup unsweetened almond milk

1/4 tsp. vanilla extract

4 tbsp. vegan butter

3 cups all-purpose flour

1/2 tsp. salt

1/4 tsp. cinnamon

1/8 tsp. nutmeg

2 vegan eggs/egg replacers (Follow the directions on the packet. I used Bob Red Mill's Egg Replacer)

Cinnamon Filling

2 tbsp. vegan butter (softened)

1/2 cup coconut sugar

1 tbsp. cinnamon

Icing

1 cup organic powdered sugar 

1 1/2 cup coconut cream (chilled)

1/2 tsp. vanilla extract

1/4 tsp. cinnamon

Directions

Preheat oven to 400 degrees Fahrenheit. In a small bowl, combine the instant yeast, 1 tbsp. of the coconut sugar, and warm water. Whisk until frothy and let sit. Set aside. 

In a medium sized bowl, combine all other dry ingredients and the remaining coconut sugar for the dough. Mix well. 

In another small bowl, melt the butter. Add the vanilla extract, almond milk, yeast, and vegan eggs. Whisk together until well combined.

In small amounts, add the wet ingredients to the dry ingredients. On a floured surface, knead the dough for a few minutes. Place dough into a greased bowl and cover with plastic wrap. Sit on the back of the stove and let rise for 1 hour. 

On a floured surface, roll out the dough into a thin layer. 

Time to prep the filling! In a small bowl, whisk together all the filling ingredients. Using a spatula, spread a thin layer of the cinnamon filling onto the dough. Roll the dough (carefully) into a giant log. Slice into medium sized pieces and place the pieces flat into a greased 9x9 baking dish.** Brush any remaining filling on the top of the rolls and bake for 25-30 minutes.

**You could set the rolls aside and let them rise for another 30 minutes before baking them if you want to. I was too anxious, and just let them bake after the dough had risen and they turned out fine :) 

Let cool completely. In a small bowl, whisk the icing ingredients. Pour over the cinnamon rolls and enjoy! 10 points to Gryffindor!
