After school snacks growing up usually consisted of potato chips, Gushers fruit snacks, fruit roll ups, and the occasional peanut butter and jelly sandwich. I've always loved a good PB&J, and as I have gotten older this snack tradition remains the same.
Looking for options to fill this craving, I came up with these very simple, no-bake, 4 ingredient, peanut butter and jelly cookies. These sweet treats will keeping you coming back for more with trips down memory lane. Have them as breakfast cookies, snacks, or that after dinner sugar fix. Enjoy!
Ingredients
1 cup oatmeal
1 cup natural crunchy peanut butter
1 ripe banana
1/4 cup fresh vegan blueberry jam (simple and delicious recipe by the talented fabfood4all) or grape jelly (any kind you want to use)
Directions
In a small bowl, add the oatmeal, peanut butter and banana. Mix well with a fork, mashing the banana as you go.
Take a small handful of mixture and roll into a ball. Flatten and round into shape. Place on wax paper.
Place jelly or jam in plastic ziplock bag and push down to a corner. Snip off the very edge and squeeqe overtop cookies. Chill until ready to eat.
