Jackfruit is one my favorite ingredients and is also one of the most uncommon ingredients I use. In my limited experience with jackfruit, I have learned that canned jackfruit is better than fresh jackfruit, and is better savory than sweet. I have also learned that the jackfruit can grow to be one of the largest fruits in the entire world! Most importantly, I have learned that jackfruit makes a great substitute for those meat cravings for pulled pork or pulled chicken. I've even used it to make delicious vegan BBQ ribs!
So, for this week I knew I wanted to create a delicious and light summer jackfruit dish, with some additions from the local Hampton Roads delivery service, The Neighborhood Harvest. As a first timer with them, I can truly say that The Neighborhood Harvest did not disappoint!

Ingredients:
1 can jackfruit in water or brine (I used Trader Joe's Jackfruit in Brine)
1 large celery stalks (sliced and diced)
1/2 yellow onion (diced)
1/2 cup vegan mayonnaise (Follow Your Heart Veganaise works great)
3/4 cup dried cranberries from The Neighborhood Harvest
1 tsp. pink Himalayan salt or sea salt
1/2 tsp. black smokehouse pepper
1/2 tsp. dried dill
1 tbsp. fresh lemon juice
1 tsp. mustard of your choice ( I used good ol' yellow mustard)
2 tbsp. dill relish
1 fresh tomato slice from The Neighborhood Harvest (sliced)
1 fresh romaine lettuce leaf from The Neighborhood Harvest
Directions
Drain the can of jackfruit and rinse with cool water. Add to a medium sized bowl. Shred with a fork until texture looks like shredded chicken. Use your hands if needed!
Add diced celery, onion, vegan mayo, and spices. Combine with a spatula until well mixed. Add the dried cranberries and combine.
Taking a romaine lettuce leaf, add about 3 heaping tbsp. of the "chicken" salad mixture. Top with tomato slice and fold up in the leaf. Chill remaining mixture and serve as a low-carb lettuce wrap, in a tortilla, on crackers, on a sandwich, or alone! And be sure to check out The Neighborhood Harvest!
