Ingredients
1 can cannellini beans (drained and rinsed)
1 tbsp. tomato paste
2 tbsp. dried basil
1 cup crushed tomatoes (freshly crushed tomatoes)
2 tbsp. minced garlic
1/2 yellow onion (diced)
1/2 tsp. coconut sugar
1 tbsp. olive oil
1/4 cup no-chicken broth (Better than Bouillon)
1 pinch crushed red pepper
Sea salt and pepper to taste
Directions
In a medium sized skillet, heat the olive oil. Saute the onions and garlic until browned on medium-high heat. Reduce the heat to med-low, and add the tomato paste, mixing well to coat the onions and garlic. Add the beans, crushed tomatoes, broth, sugar, and spices. Mix well.
Simmer on med-low heat for 10 minutes. Serve warm on toast or over rice. Works great as an inexpensive and tasty weekly lunch meal prep dish.
