Vegan Smoothie Bowl

Last Saturday, I went through something that I am no stranger to encountering. Fever, chills, headache, pain, fatigue. A terrible combination of symptoms, and the worst for anyone with a troubled history of a gastrointestinal medical condition.

Through an urgent care visit and a round of antibiotics later, my diet was put on restriction.

After chugging down nothing but the Green Machine Naked juice, this vegan smoothie bowl became one of the only things I could have and one of the only things that filled me up.

Give it a try this Sunday and enjoy in a bowl or slurp down with a straw. I hope you all do something fun this Sunday!

Ingredients (I used fresh fruit that I had frozen fresh vs. bagged fruit)

1 1/2 cup frozen strawberries

1 cup frozen blueberries

1 frozen banana

1/2 cup almond milk

1/4 cup orange juice

Directions

In a blender, add all the ingredients. Blend for several minutes until a very thick, smooth texture. Use a spatula to push down the sides of the blender if needed.

Add more orange juice or almond milk if you'd prefer to have this as a smoothie vs. a smoothie bowl.

Move to a bowl (or a cup with a straw if you'd like) and top with your favorite toppings.
