Anyone who knows me, knows that I am a huge Harry Potter fan. So, it's no surprise that every fall I watch all seven of the films. That being said, if you have ever seen the movies yourself, then you know the films are full of different types of foods. Whether at the Weasley home or in the great hall; the team has delicious foods to nosh. So, in light of the fall season, I have made my version of pumpkin pasties. Inspired by the brilliant works of The Unofficial Harry Potter Cookbook (p.39), these delicious pumpkin pasties will be a great addition to your tea time or Harry Potter fall film watching.

Ingredients
Pastie Crust:
1 1/4 cups all-purpose flour
1 tbsp. natural sugar
1/4 tsp. sea salt
8 tbsp. chilled vegan butter
3 tbsp. water
Filling:
1 can pumpkin puree
1/4 cup natural sugar
1/8 tsp. pure vanilla extract
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/2 tsp. pumpkin pie spice
Coating:
2 tbsp. melted vegan butter
1 cup natural sugar
1 tsp. cinnamon
2 tsp. pumpkin spice
Directions
Preheat oven to 400 degrees F.
In a medium sized bowl, combine all the filling ingredients and set aside.
In another medium sized bowl, combine the flour, sugar, and sea salt for the dough. Cut in the vegan butter and add the water 1 tbsp. at a time. Combine until dough is created.
On a floured surface, knead dough and roll out into a thin layer. Cut the dough into circular shapes. Roll out dough more if too thick.
Add 1 tbsp. of the pumpkin filling to the middle of the circle. Fold over and press down dough. Dip your finger in some water and trace along the edge of the dough. Fold over the end of dough and press down. Press with a fork around the edge to close.
Next, combine the all the dry coating ingredients. Take the melted vegan butter and baste the pasties with the butter. Coat each side of the pasties with the dry sugar and spice coating.
Place on a parchment paper-lined cookie sheet and bake at 400 degrees for 25 minutes-30 minutes.
Let cool and enjoy!
