"In this house, we have chocolate cake for breakfast." As a 90's kid, I remember that line well in the film Practical Magic . That movie was full of everything I knew nothing about, and everything I wasn't allowed to watch. So naturally, I loved it. I soaked up every moment, and absorbed every bit of its magic. The soundtrack became the theme songs of my relatively uneventful teenage angst life, and chocolate cake remains my favorite to this day. Choosing this item from the film, was a no brainer.
I will admit, the original recipe inspiration for this dish was much more involved, yet looked way better than mine did in the end (See the Tasty recipe here). I don't really consider myself a baker, and my vegan version of this came out looking anything but magical. But, perhaps you will have better results. Give this moist and fluffy (and despite looks, really delicious) vegan chocolate cake a try and I hope you do something fun this Sunday!
Ingredients:
Cake-
1 1/2 cups flour
1 cup Hershey's coco powder
1 tsp. sea salt
1 1/2 tsp. baking soda
1/2 tsp. baking powder
1/8 tsp. cinnamon
1/8 tsp. cayenne pepper
3 vegan eggs
1 1/2 cups natural sugar
1/2 cup plain vegan mayonnaise
5 tbsp. vegan butter
1 tsp. vanilla extract
Frosting-
8 tbsp. vegan butter
1/2 cup coco powder
1 tbsp. vanilla extract
1 pinch of cayenne pepper and cinnamon
4 cups powdered sugar
Directions:
Preheat oven to 325 degrees Fahrenheit.
For the cake-In a medium sized bowl, combine all the dry ingredients, except the sugar. Whisk together until well mixed.
In a seperate medium bowl, add the vegan butter, vanilla, vegan mayo, sugar, and the vegan eggs. Using a hand mixer, cream together until smooth.
Slowly add the dry ingredients into the wet ingredients. Using the hand mixer, mix until well mixed.
Grease two cake pans, and dust with flour. Split cake mixture evenly in the two pans and bake at 325 degrees for 35 minutes. Remove and let cool completely.
For frosting-In a medium sized bowl, add the butter and vanilla. Use a hand mixer and cream together. Add the coco powder, cinnamon and cayenne pepper. Mix well. Add the powdered sugar, a little at a time until all has been added. Continue to cream with hand mixer until well mixed. Mixture will be smooth and sweet.
Take one half of the cake and place on a plate. Using a spatula, spread the frosting onto the top of the bottom cake layer. Add the second half and repeat. Spread the frosting around all sides of the mixture. If the frosting is too runny, you may want to place the cake in the fridge or freezer to harden a bit. Mine was a not quite as thick in texture, which caused my cake to look like a bit of a disaster. It tasted great, but looked like I tried to cut it with my hands...
